How To Make Homemade Doughnuts

Sean loves doughnuts. Every time I go grocery shopping, I pick up a bag or two of chocolate covered doughnuts. I, however, am not a huge doughnut fan. Fried dough, covered in sugar and frosting...not really my thing. While at Sean's parents house, I found a doughnut recipe, and I couldn't believe that I had all the ingredients already...including the frosting! It's so easy, and takes about a half hour for prep and cook time. I made a few mistakes along the way, as I normally do. But it leads to your success if you so decide to make your own doughnuts at home.


What you'll need:
1/2 cup Sugar
1 tsp Cinnamon
Vegetable Oil
1 can Pillsbury Grand Biscuits
Mix sugar and cinnamon together
Flatten biscuits and cut out doughnut hole. I used a shot glass.
Heat a cast iron skillet with oil. Deep fry dough on a medium-low
heat...found this out the hard way. Dough cooks rather quickly.
Place doughnuts and holes on paper towels.

Add your toppings! I don't own many toppings like sprinkles, etc..but we do have frosting. Sean added syrup to the plain doughnuts and loved them both. I had one plain and one with frosting, so good! I was pleasantly surprised with how well they turned out. One can makes approximately 16 doughnut/doughnut holes. I'm being dead serious when I say this was crazy quick and easy! Try them out this weekend for breakfast!

Cheesy Chicken Enchiladas Recipe

When I first started experimenting with recipes that I found online last year, this cheesy chicken enchiladas recipe was a winner. Enjoy them! I hope you like your food spicy!

 
Cheesy Chicken Enchiladas:
 
Sauce:
2 tbsp Minced Garlic
2 tbsp Chipotle Chili's in Adobe Sauce
1.5 cup Tomato Sauce
1/2 tsp Chili Powder
1/2 tsp Cumin
3/4 cup Chicken Broth
Salt & Pepper
 
Chicken:
1 tsp Vegetable Oil
2 tbsp Minced Garlic
2 Chicken Breasts, cooked or Rotisserie Chicken
Salt
1 tsp Cumin
1 tsp Chili Powder
1/3 cup Chicken Broth
1/2 cup Tomato Sauce
 
8 Tortillas
Mexican Cheese
 
Directions:
In a medium saucepan, spray oil and sauté garlic.
Add chipotle chiles, chili powser, cumin, chicken broth, tomato sauce, salt and pepper.
Bring to a boil.
Reduce heat to low and simmer 5-10 minutes. Set aside
 
Preheat oven 400 degrees
 
Heat vegetable oil in a medium skillet over medium-high heat and sauté garlic until soft, about 2-5 minutes.
Add chicken, salt, cumin, oregano, chili powder, tomato sauce, and chicken broth.
Cook 4-5 minutes. Set aside.
Spray a 13x9 inch baking dish with non-stick spray.
Put 1/3 cup chicken mixture into a tortilla and roll.
Place in dish, seam side down. Repeat.
Top with sauce and cheese.
Cover with foil.
Bake 20-25 minutes

Taco Chili Crockpot Recipe

We love chili! I was on the look out for freezer meal recipes, and this one has become a staple in our home. It's extremely easy to make and delicious! Keep in mind the recipe I am going to provide is meant to go in the freezer. Sean used this recipe last night for dinner, and put the ingredients in the crock-pot for an hour; it turned out perfectly!


Crockpot Taco Chili:
 
1 lb Cooked Ground Beef
1 can Corn, drained
1 can Black Beans, drained
1 can Navy Beans, drained
18 oz can Tomato Sauce
1 pkg Taco Seasoning
1 can Green Chilies
1/4 tsp Paprika
1/4 tsp Garlic Powder
1 tsp Cumin
1 tsp Salt
1/2 tsp Pepper

Place all ingredients in a large Ziploc bag and freeze.

COOK:
Place in crock-pot on Low for 8 hours or High for 4-6 hours.

We top the chili with shredded cheese and scoop with Tostitos. I have disregarded a few ingredients, you can find the recipe here.

Ramen Noodle Bake

I don't cook often, but when I do, I try to make something both Sean and I will enjoy. As most things, I found this recipe on Pinterestand I kid you not it tastes just like lasagna! It's super easy to make and crazy affordable! I payed roughly $5 for the entire meal. You really cannot beat that!


Ramen Noodle Bake
Printable Recipe


Ingredients:
----------------------
4 packs of Ramen Noodle
1 lb Ground beef
1 jar Spaghetti sauce
1 package Ramen beef seasoning
2 cups Mozzarella cheese, divided
3 1/2 cups Water

Preheat oven 400 degrees


Break up Ramen noodles into a greased 9x13 inch pan. They should cover the bottom of the pan.


Brown meat. Drain. Season with beef flavor seasoning packet.


Sprinkle meat over dry noodles.


Pour the jar of sauce over the meat.
Sprinkle 1 cup of cheese over the sauce.


Mix together.


Add water. 
(I know it doesn't look very appetizing, but you're almost there!)


Cover tightly with aluminum foil.
Bake 45 minutes or until water is absorbed.
Remove foil and sprinkle 1 cup of cheese.
Return to oven for 8 minutes.

and.....


Voila!

There you have it! I dare you to try it and tell me it wasn't delicious!
